The Bull & Castle was another one of the craft beer bars that I got to experience twice in my short two weeks exploring Dublin. This had a decent selection of beers that I didn't see at other pubs. I had their Buckley's Golden Ale, O'Hara Spring Saison, Eight Degrees Full Irish, and Wicklow Wolf Arcadia Kolsch.
The Full Irish was most memorable. It was extremely complex and well balanced. I distinctly remember the aroma, which smelled like the inside of a fresh flower. If I could wear it as perfume, I would.. except that would be less of it I could drink. It was somehow the perfect balance between hoppy, malty, citrus and floral. This single malt IPA may have been my favorite beer of the whole trip. This beer is only on draught in Dublin, Cork, and Galway, but it's definitely on my list to find again one day!
